Nassau

Nassau is the capital of the Bahamas. The city is located on the island of New Providence, which functions much like a federal district. While there is no local government, it is governed directly as an administrative division of the national government. Nassau is considered a historical stronghold of pirates.

The bus tours are pretty interesting. They'll drive you around, and tell you about the local government, tell you about different points of interest, and take you to old forts, and to Paradise Island, to see the famous Atlantis hotel resort and its stunning aquarium.

The Bahamas is a paradise to seafood lovers. Crawfish, conch, land crabs, and fish such as groupers, Yellow Tails, and Red Snappers are local and tourist favorites. A typical Bahamian meal consists of crab and rice, delicious steamed fish, served with baked macaroni and cheese, fried plantain and a good helping of potato salad. This is followed by desserts such as coconut or pineapple tart, bread pudding or guava duff, a delicious dessert that is made through a laborious process of folding the fruit into dough and boiling it. Guava duff is served with a sweet buttercream rum sauce. This meal is topped off with a large glass of ice cold "switcha" (lemon, sugar and water mixture) or beer. A typical Bahamian Christmas meal consists of baked ham and baked turkey with stuffing, green peas and rice, yam or sweet potato, baked macaroni and cheese, potato salad, coleslaw and vegetables. Boiled fish and grits is a favorite breakfast. Grouper is the most popular fish, often served boiled in a lime-based broth. Bahamians are experts at cooking this fish which is flaky, white, tender and mild in flavor.
